Ice cream for breakfast anyone? Then this one is just for you. A Peanut Butter Banana Ice Cream Sandwich, you can just grab out of the freezer on those super hot mornings.
This really easy ice is made with just 2 ingredients. Bananas and peanut butter blended together to form an ice cream like texture, kept in the freezer for an hour. It is then sandwiched between 2 peanut butter cookies. How yum is that??
MAKING THE PEANUT BUTTER ICE CREAM
Let's talk about the makings of the peanut butter ice cream first. Super easy to make, the bananas are sliced and placed in the freezer for about an hour or two. I usually just freeze the bananas for an hour because my blender is not very powerful. I don't want the blender to crack when blending the bananas?. So the bananas are cold just not fully frozen at this stage. After about an hour in the freezer, the sliced bananas are placed into the blender with the peanut butter. Blended to a smooth creamy consistency and then placed into a container and placed back into the freezer for about 2 hours. Allow it to really freeze like ice cream.
MAKING THE PEANUT BUTTER COOKIES
Now for the peanut butter cookies. Whether I am having these cookies plain or with the ice cream, I really prefer that it not be overly sweet. I mean this is a peanut butter cookie, not a sugar cookie after all right...you want to taste the peanut butter not the sugar. So the recipe for these cookies are so good and work perfectly with this ice cream. Did I mention that it has oats in it...well it has oats in it...sounding more and more like a breakfast now right? After the cookies are baked, allow to cool.
After about 2 hours, the peanut butter and banana mix should resemble ice cream now. Remove it from the freezer and place spoonfuls of the ice cream on one side of the cookie. Sandwich with another cookie and drizzle with chocolate or sprinkle chopped nuts if you like. Now just place the sandwiched cookies in the freezer to harden up a bit, should be about 15 to 30 minutes ….and then dive in and devour away.

Peanut Butter Banana Ice Cream Sandwich
Ingredients
FOR THE PEANUT BUTTER BANANA ICE CREAM
- 3 large ripe bananas
- 3 tablespoons peanut butter I used sugar and salt free peanut butter
FOR THE PEANUT BUTTER COOKIES
- ¾ cup / 170g butter or margarine
- ½ cup / 100g brown sugar
- ¾ cup / 190g peanut butter
- 3 tablespoons / 45ml milk
- 1 tablespoon / 15 ml vanilla extract
- 2 cups / 240g all purpose / cake flour
- ½ cup / 70g oats
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup / 60 ml buttermilk
Instructions
FOR THE PEANUT BUTTER BANANA ICE CREAM
- Cut the bananas into small chunks and freeze until solid, at least 1-2 hours. SEE NOTE 1
- Place the bananas into a blender and blend until smooth and creamy. This will take a few minutes. You may have to stop the blender to scrape the sides using a spatula. Close the blender and Continue blending until you see a smooth texture.
- Add the peanut butter. Pulse the blender to incorporate the peanut butter. Empty out into a container and freeze for 1 to 2 hours.
FOR THE PEANUT BUTTER COOKIES
- Cream butter or margarine, brown sugar, peanut butter together by hand or with hand mixer until smooth and blended.
- Add milk, vanilla and buttermilk.
- Mix well.
- Sift dry ingredients together and add to batter slowly, mixing well.
- Roll into approximately 1 inch balls and flatten with a fork.
- Bake at 375°F / 180°C for about 10-12 minutes.
- Do not overbake as it will continue to crisp and bake when removed from the oven. Remove from the oven and leave on the tray for 5 minutes. Using a spatula transfer the cookies to a cooling rack and allow to cool completely.

Sandwich with another cookie and drizzle with chocolate or sprinkle chopped nuts if you like. Well as we're having the most amazing summer here in Scotland so far Ashika, I could be adding these to the menu for breakfast! What a great way to make easy ice cream too. Banana and peanut butter blended together and then frozen. Quite right to have the cookies not too sweet either or that might take away that delicious creaminess. This is a great pairing!
