2 ingredient Ice Cream Bread

This 2 ingredient Ice Cream Bread is an incredibly quick and easy bake.  Serve glazed or dusted with powdered sugar for dessert or with a spread of butter for breakfast. A super easy and versatile recipe.

2 ingredient Ice Cream Bread

If you like quick and easy recipes, then this is a great bake for you. This is such a versatile recipe because you can use any flavour ice cream you love. There is no special equipment needed, just a bowl and spoon is required to mix the batter.

CREATE THE PERFECT ICE CREAM BREAD

Even with just 2 ingredients, here are a few tips that will ensure a delicious bake:

Use only full cream ice cream.  Do not use low, fat, fat-free or sorbet, this will affect the texture of the bread.

It is important to use self-raising flour in this recipe to ensure that the bread rises. If you do not have self-raising flour, then just make your own. To make self-raising flour for this recipe, add 2 teaspoons of baking powder and a ½ teaspoon of salt to 1 ½ cups of flour. Whisk the baking powder and salt to distribute evenly through the flour. 

Do not use the ice cream while it is frozen. Allow it to soften for about 15 minutes before adding the flour. This makes it easier to combine and overmixing is avoided. You want the ice cream to be cold but soft, so don't microwave it as it will be warm.

Overmixing is a BIG NO NO. Add the flour a little at a time and mix until just combined. Overmixing is going to lead to a dense and flat bake. 

Do not overbake. Overbaking will result in dry and dense bread.

USE ANY FLAVOUR ICE CREAM OR ADD STUFF

The best part of this recipe is that you can use any flavour ice cream you love. Give blueberry, chocolate or even strawberry flavoured ice cream a try, it tastes amazing.

Add some crunch to the recipe by folding in some chocolate chips, chopped peanuts or colourful sprinkles. 

Top the bread with a glaze or sieved powdered sugar.

CUSTOMISE YOUR BAKE

This ice cream bread recipe can be doubled for a larger loaf. 

Use any shape baking pan you prefer and bake accordingly. For instance, if you are going to use a muffin tin, then just bake for between 12 to 15 minutes.

MAKING THE 2 INGREDIENT ICE CREAM BREAD

2 ingredient Ice Cream Bread

Super easy to make, the softened ice cream is mixed with the flour until just combined. Do not overmix.

If you are adding any peanuts or chocolate chips, then just gently fold it into the batter.

Spread the batter evenly into a loaf pan and bake at  320°F /160°C for 25 to 30 minutes or until a toothpick/skewer inserted comes out clean. 

Remove from the oven and transfer the baked loaf to a cooling rack. 

Drizzle with a glaze or dust with sifted powdered/icing sugar if you prefer.

Equipment

9x5-inch / 23 x 13 cm loaf pan

Ingredients
  

  • 2 ½ cups / 370g ice cream softened SEE NOTE 1
  • 1 ½ cups / 187g self raising flour SEE NOTE 2

Instructions
 

  • Add softened ice cream to the flour, a little at a time and mix until just combined.
  • If you are adding any peanuts or chocolate chips, then just gently fold it into the batter.
  • Spread the batter evenly into a greased and lined 9x5-inch / 23 x 13 cm loaf pan SEE NOTE 3
  • Bake at 320°F /160°C for 25 to 30 minutes or until a toothpick/skewer inserted comes out clean.
  • Remove from the oven and transfer the baked loaf to a cooling rack.
  • Drizzle with a glaze or dust with sifted powdered/icing sugar if you prefer.

      Hi Bonnie
      Sure here is a recipe for the glaze which I use on my classic lemon loaf. You can see how the glaze looks in this post. I omitted the lemon juice from the following recipe, but you can add a 1/4 teaspoon of vanilla extract for flavor if you like.
      1 ½ cup / 180g confectioners’ / powdered sugar
      2 tablespoon / 30ml milk or boiling water
      To make the glaze, add 2 Tablespoons very hot milk or very hot water to 1 ½ cups powdered sugar.
      If you prefer the glaze thicker, then add ¼ cup more powdered sugar at a time and mix to your preferred consistency. If you prefer the glaze thinner, then add a teaspoon at a time of the milk or water and mix to your desired consistency.
