Tips for Baking Muffins and Cupcakes

These are a few general tips I use when baking muffins and cupcakes. Some recipes need a slightly different method, so always follow the instructions in the individual recipe.

Measure your flour carefully. If you're using cups, spoon the flour into the measuring cup and level it off rather than scooping straight from the bag.
Preheat the oven first. Have it at the right temperature before you start mixing the batter.
Don't overmix. Once the flour goes in, mix just until the batter reaches the consistency described in the recipe.
Start checking before the baking time is up. Ovens can bake differently, so check a few minutes early.
Let them cool completely before storing. Packing them away while they're still warm traps steam and can leave the tops sticky.

How to store muffins and cupcakes

Most muffins can be stored in an airtight container at room temperature for 2 to 3 days.

Cupcakes without frosting can usually be stored the same way. If the frosting contains ingredients that need refrigeration, such as cream cheese or fresh cream, keep the cupcakes covered in the refrigerator.
