I have become truly obsessed with muesli. With its amazing taste, I find myself addicted to snacking on the crunchy grains and chewy fruit straight out of the bag. No worries though, because I remembered (this time 😉 to save a cup and a half to add to these muesli pancakes.
I can promise that you are going to love this recipe. It is comfort food at its best with these soft and fluffy pancakes filled with healthy and wholesome muesli.
WHAT IS MUESLI?
Muesli is a great mix of grains, nuts, and dried fruit. Packed with protein, fiber, vitamins, and antioxidants it makes an excellent breakfast or snack.
Muesli can be homemade or storebought. For these pancakes, I am using the storebought variety. It contains my favorite mix of grains, nuts fruit. So go ahead and use your favorite mix too.
Muesli is versatile in how it is prepared and eaten, like with this recipe, it is combined into the pancake batter. These soft and tender pancakes are studded with muesli and drizzled with honey or syrup.
BREAKFAST OR DESSERT?
How about both? These pancakes are versatile. It can prepare it either as a breakfast or dessert
AS A BREAKFAST:
Drizzle the cooked pancakes with syrup or honey
Top with fruit and nuts
Serve with a dollop of yogurt
Sprinkle with cinnamon sugar
AS A DESSERT:
Drizzle the cooked pancakes with melted white or dark chocolate ( or both ; )
Top with fresh or dried fruit ( I love using fresh or dried cranberries. It adds amazing color and taste )
Serve with a scoop of ice cream or whipped cream
INGREDIENTS USED IN MUESLI PANCAKES
FLOUR: Use either plain, all-purpose or cake flour
BAKING POWDER: Used to create fluffiness and light, soft textured pancakes. Without it, the pancakes will be dense and tough.
MILK: To create a soft liquid batter
EGG: Contributes to the airiness and softness of the pancake. It also adds flavor to the muesli pancakes.
OIL: Maintains the moisture in the pancakes.
YOGURT: Adds to the tenderness of the pancakes as well as adding extra protein to the recipe
MUESLI: Packs the pancakes with protein, fiber, vitamins and antioxidants and makes it super delicious too.
You will notice that there is no sugar or salt added to this recipe. These ingredients are totally optional and can be added according to your taste and preference.
I personally do not add sugar to the batter, because I prefer the cooked pancakes drizzled lightly with syrup, or honey. Sprinkling a bit of cinnamon sugar also adds sweetness to the cooked pancakes.
MAKING THE MUESLI PANCAKES
Start by sifting the flour, baking powder and salt into a bowl.
Add the milk, beaten egg, oil and yogurt, and whisk to form a soft batter.
Stir in the muesli and leave to stand for 5 minutes.
Lightly grease a frying pan and heat to medium heat. Spoon a tablespoon of batter into the pan and spread it out to as thick or thin as you prefer. Cook until bubbles appear on the surface.
Turn the pancakes over with a spatula and cook the other side until golden brown. Repeat the process using the remaining batter while keeping the cooked pancakes warm.
Drizzle the pancakes with honey or syrup or serve as preferred.
These pancakes are best served warm.

- 2 Tablespoons / 30ml oil plus extra for greasing
- 2 Tablespoons / 30ml plain yogurt
- 130 g / 1 cup muesli SEE NOTE 1
- Syrup or honey to serve optional SEE NOTE 2
Instructions

Muesli are great and we eat them when autumn arrives and we replace the fruits with them. I have never thought of making pancakes with them. Brilliant idea Ashika ! 🙂
