Sift the flour, baking powder and salt into a bowl.
Add the milk, beaten egg, oil and yogurt, and whisk to form a soft batter.
Stir in the muesli and leave to stand for 5 minutes.
Lightly grease a frying pan and heat to medium heat. Spoon a tablespoon of batter into the pan and spread it out to as thick or thin as you prefer. Cook until bubbles appear on the surface.
Turn the pancakes over with a spatula and cook the other side until golden brown. Repeat the process using the remaining batter while keeping the cooked pancakes warm.
Drizzle the pancakes with honey or syrup or serve as preferred.
These pancakes are best served warm.
Recipe Notes
1. I am using the storebought variety. It contains my favorite mix of grains, nuts fruit. So go ahead and use your favorite mix too. 2. You will notice that there is no sugar or salt added to this recipe. These ingredients are totally optional and can be added according to your taste and preference. I personally do not add sugar to the batter, because I prefer the cooked pancakes drizzled lightly with syrup, or honey. Sprinkling a bit of cinnamon sugar also adds sweetness to the cooked pancakes.
