Yogurt mixture: Stir the yogurt and honey or maple syrup together until combined.
Divide the yogurt between two bowls if making different fruit flavors. Add the fruit and blend until smooth.
Use a stick blender, blender, or food processor to blend until smooth and creamy.
Granola mixture: Stir together the granola and honey or maple syrup in a small bowl.
If using a silicone cakesicle mold (like the ones shown in the photos), divide the yogurt mixture between the molds. Add a small spoonful of the granola mixture to the top end of each popsicle.
If using a traditional upright popsicle mold or paper cups, fill with the yogurt mixture and add the granola mixture on top. Insert the sticks or lids according to the manufacturer's instructions. The granola will remain concentrated near the stick end. When using paper cups, freeze until partially set before inserting the sticks.
Cover with lids or foil and freeze for at least 4 hours, or until completely firm.
Recipe Notes
Yogurt: Full-fat Greek yogurt makes the creamiest popsicles, but regular plain or whole milk yogurt works well too.Sweetener: Honey, maple syrup, or agave can be used. If using sweetened yogurt, you may not need additional sweetener.Popsicle molds: If you do not have a popsicle mold, use small paper cups, plastic cups, or another freezer-safe container. Insert the sticks once the mixture is partially frozen if needed.Freezing: Cover the molds with lids or foil before freezing to help prevent ice crystals from forming.
