Made with fresh orange zest and poppy seeds, these no-knead buns are brushed with orange butter. The dough is simply rolled into a rectangle, cut into squares, and baked with no shaping required.

- Flour mixture: In a large bowl, whisk together the flour, yeast, salt, sugar, orange zest, and poppy seeds.
- Milk mixture: In another bowl, whisk together the milk, water, melted butter, and egg.

- Pour the milk mixture into the flour mixture.
- Stir with a spatula or dough whisk until a soft, sticky dough forms.

- Cover the bowl and let the dough rise in a warm place for 45-60 minutes
- The dough is ready when it has roughly doubled in size. It doesn't have to be exactly twice as big. You're looking for dough that's nice and puffy.

- Sprinkle about ¼ cup flour onto your work surface. Turn the dough onto the floured surface and lightly dust the top with flour. The dough will be quite sticky after rising, so use a spatula to gently fold it over a few times, adding just enough flour until it's easier to handle. This will make it easier to roll in the next step.
- Press or roll the dough into a rectangle about 10 × 12 inches (25 × 30 cm).

- From the short side, cut the dough into 4 strips, each about 2½ inches (6 cm) wide.
- From the long side, cut the dough into 5 rows, about 2½ inches (6 cm) apart, to create 20 square pieces.

- Arrange the dough squares on a parchment-lined baking sheet, leaving about 1 inch (2.5 cm) between each one. Lightly tuck in the corners of each square for a softer, pillowy shape. Cover loosely and let them rise at room temperature for 20 minutes. Bake for 18–20 minutes.
- Orange butter: While the buns bake make the orange butter, by stirring together the melted butter, orange juice, orange zest, and sugar until well combined.
- Brush the warm buns with the orange butter as soon as they come out of the oven.
Enjoy these buns warm, either on their own or with a spread of butter.
Storage
These buns are at their best the day they're baked, when they're soft and fresh. If you have leftovers, store them in an airtight container at room temperature for up to 2 days. Warm them in the microwave for a few seconds or in a 300°F (150°C) oven for 5–8 minutes.
If you have any orange butter left, refrigerate it, then warm it before drizzling over the reheated buns.
Make Ahead Option
If you'd like to make the dough ahead of time, mix the dough and cover the bowl tightly. Refrigerate for up to 12 hours. When you're ready to continue, let the dough sit at room temperature for 30–40 minutes, then roll, cut, and continue with the recipe.

- 3 cups (360 g) all purpose flour (plain flour)
- 2¼ teaspoons (7 g) instant yeast
- 1 ¼ teaspoon salt (use 1 teaspoon if using salted butter)
- 3 tablespoons (38 g) white granulated sugar
- 1 tablespoon finely grated orange zest

- ¾ cup (180 ml) warm milk (100–110°F / 38–43°C)
- ¼ cup (60 ml) warm water (100–110°F / 38–43°C)
