2 ingredient Mini Ice Cream French Toast (no eggs)

This Mini French toast is made with melted ice cream instead of eggs. Just two ingredients, quick to make, and the perfect little indulgent dessert.

No egg soak here, just melted ice cream for a quick twist. Just dip and cook and it's ready in about 15 minutes from start to finish!

I used a small French loaf that sliced into little rounds, but soft sandwich bread works too. They cook quickly and feel a bit more fun than the usual big slice.

This is a great little dessert when you want something warm and sweet without making a full batch or turning on the oven. It’s also a fun idea for kids, small brunch plates, or dessert boards.

Ingredient notes

French bread (baguette): I used French bread about 2.5 inches (6 cm) wide, sliced into ¾ inch (2 cm) thick rounds. The small size makes them easy to cook and serve. Soft sandwich bread works too, just slice it thick and cut it smaller after cooking if you like. No need to trim the crusts; they help the slices hold together in the pan.

Ice cream: Vanilla works best here, melted until smooth and pourable. (I also use it in this quick 2 ingredient ice Cream Bread)

Jam: I’ve included instructions for a quick jam syrup below, but it’s totally optional. You can skip the syrup, but it adds color and contrast, a nice change from the usual maple topping. If you prefer, serve plain or with a scoop of vanilla ice cream instead.

  1. Lightly dip bread slices in melted vanilla ice cream.
  2. Cook in a nonstick or cast iron pan over medium heat.
  • If your pan isn’t nonstick, it’s best to add a little butter or cooking spray to keep the toast from sticking.
  • Even with nonstick, you can still add 1 teaspoon of butter for extra flavor and browning.
  • Cook for 2–3 minutes per side until golden and crisp.

  1. Warm the jam in a heated pan off the stove and stir until smooth and syrupy.
  2. Plate it up, swirl on jam, and add fresh berries or nuts if you’re feeling fancy 😉

Ingredients
  • 6 slices French bread (baguette) (each slice was 2.5 inches (6cm) wide, sliced about ¾ inch (2cm) thick)
  • 1 cup (250 ml) vanilla ice cream, melted

Optional - Jam Syrup

  • 2 tablespoons strawberry jam
Instructions
  • Melt the ice cream: Leave it out at room temperature until fully melted, or warm gently in the microwave (about 20–30 seconds) or on the stove over low heat, just until pourable, not hot.
  • Dip the bread: Lightly dip both sides of each slice into the melted ice cream. Don’t soak it, just a quick dip is enough.
  • Cook: Heat a nonstick or cast iron pan over medium heat.
    If your pan isn’t nonstick, it’s best to add a little butter or spray to help prevent sticking.
    Even with nonstick, you can still add 1 teaspoon of butter for extra flavor and browning.
    Cook each slice for 2–3 minutes per side, until golden and crisp.

Optional -Jam syrup

  • Make the jam syrup: Warm a small pan over medium heat, then remove it from the heat.
    Add the jam and leave it in the warm pan for 30 seconds to 1 minute. That gentle heat is enough to soften it, no need to let it bubble or cook. Stir until smooth and syrupy.
  • Serve: Plate the mini French toast and drizzle or swirl the jam syrup over the top. I used a piping bag for the swirl, but a spoon works just as well.
    Add berries, chopped nuts, or powdered sugar if you like.
Recipe Notes
  1. The French bread (baguette) I used was about 2.5 inches (6cm) wide and sliced about ¾ inch (2cm) thick.  If your loaf is larger, just cut the slices in half or quarters after cooking. No need to trim the crusts, they help the slices hold their shape while cooking.
  2. To make more: Just double or triple the ingredients. For example, 2 cups of melted ice cream and 12–16 slices of bread will serve about 4 people.
  3. Ice cream: Vanilla is classic, but creamy flavors like cinnamon or caramel work too.

    This is beyond brilliant. I just tried a practice round to see just how it would work and believe me when I tell you THIS is such a elegantly simple dessert. I'm having company tomorrow and will be making this for all. I'm taking some of the melted ice cream and adding a splash of orange liqueur and a few raspberries to top it off. Unbelievably simple.
