I used to come across so many recipes which required broth or stock as an ingredient and had to do without it. This was because I never used store bought which I found way too high in salt and additives. I also thought that making broth was a long and extensive procedure. Well not anymore, because with my with my easy homemade recipe, this broth is made and ready to use in just 5 minutes.

I always find homemade best because you have total control of ingredients and flavoring going into your food. This easy homemade vegetable broth is so versatile where you can add veggies of your choice to add amazing flavour. Let me show you just how easy it is to make

MAKING THE EASY HOMEMADE VEGETABLE BROTH

My favorite combination of vegetables for making this broth is carrots, celery, onions, garlic and herbs such as coriander and thyme. But feel free to add vegetables like mushrooms, peppers and turnips or herbs like sage, basil or oregano to flavour your broth as well. Whole black peppercorns and salt is added to taste.

Chop the vegetables which you are using and toss into a blender with the herb, salt and peppercorns or ground black pepper. Cover with hot water from the kettle and leave for 5 minutes. This helps the vegetables soften and flavours begin to fuse.

After 5 minutes, cover with lid and turn on the blender. It should take about 1 to 2 minutes for all the vegetables to be well blended.

Once blended, pour the mixture through a sieve or strainer into a bowl. Using a spoon, Press the vegetable pulp  in the strainer to release as much of the liquid into the bowl as possible.

Easy Homemade Vegetable Broth

The broth can now either be used immediately or stored in the fridge for up to a week. It can also be poured into an ice-cube tray and frozen, then used as needed. I just pop about 3 or 4 frozen broth cubes into the soup while cooking. As it melts and dissolves, all the delicious flavour from the herbs and vegetables are released.

Ingredients

  • 2 whole carrots scraped and chopped
  • ½ bunch celery with stalks and leaves chopped
  • ½ cup coriander or parsley chopped
  • 1 medium onion peeled and chopped
  • 2 cloves garlic peeled and chopped
  • Sprigs of thyme use as preferred
  • ½ teaspoon dried mixed herbs optional
  • Black peppercorns or ground pepper to taste
  • Salt to taste
  • Hot water from the kettle sufficient to cover the vegetables in the blender
