Yogurt Granola Popsicles

These Yogurt Granola Popsicles are super easy to make. Plus its a fun way to start your day or enjoy as a snack anytime.

Ingredients

For the yogurt fruit mixture

  • 1 cup yogurt see note 1
  • 2 Tablespoons honey or maple syrup see note 2
  • ½ cup blueberries, fresh or frozen see note 3
  • ½ cup strawberries, fresh or frozen

For the granola mixture

  • ½ cup granola no specific brand, just use your favorite granola
  • 2 Tablespoons honey or maple syrup

Instructions

Make the yogurt fruit mixture

  • Mix honey or maple syrup into the yogurt. If you are using a sweetened yogurt, you can skip the addition of the sweetener.
  • If you've got different kinds of fruit to mix in, just divide the yogurt accordingly. I had strawberries and blueberries, so I split the yogurt into two bowls.
  • Add the blueberries to one bowl, strawberries to the second bowl.
  • Use a blender or stick blender to blend the fruit with the yogurt.

Make the granola mixture and pour in blended yogurt mixture

  • Mix the granola and honey or maple syrup in a small bowl.
  • Depending on the kind of ice cream molds you've got, you can work in two ways.
  • One is to simply press the granola mixture into the bottom of popsicle molds, firmly pressing them down. Then pour the blended yogurt mixture over it. This method will also apply if you are using a plastic cup as a mold
  • The other option, which I have, is to first pour blended yogurt mixture using a mold similar to the ones shown in the pictures in the post above. Then sprinkle the granola mixture over the blended yogurt mixture. (See note 4)
  • Cover with lids or foil. (See note 5)
  • Freeze the popsicles for 4 hours or until completely firm. Enjoy straight from the freezer.
  • NOTE: I used a set of 8 silicone mini molds, each cavity measuring 2 ⅓ inch (6 cm) in length, about 1 inch (2.54cm in width) and 1 inch (2.54cm) deep.
    If you have larger molds, feel free to adjust the recipe accordingly, either by doubling the quantities or adapting it to fit the capacity of your molds.

Notes

1.Yogurt: I usually go for full-fat Greek yogurt in these popsicles because it's creamier and richer. But don't worry if you don't have it because regular plain or double cream yogurt works fine too. And if you're trying to cut back on fat, you can use low fat or nonfat yogurt instead. It's a personal preference, so use what you like or have on hand. Keep in mind however that the consistency of your popsicles might vary depending on the type of yogurt you use. If you go with low fat or nonfat yogurt, they could turn out a bit icier rather than creamy.
 
2.If you want to keep the recipe super low in sugar you can use plain yogurt without sweetening it. Or else, honey, maple syrup or agave will work as good alternatives.
 
3. Your choice of fruit: I used fresh strawberries and frozen blueberries to make 2 different flavors of yogurt popsicles but feel free to use your favorite fresh fruit. You have various options for the type of fruit you can use in your popsicles. strawberries, blueberries, raspberries, blackberries, mangoes, peaches, kiwis, and even citrus fruits like oranges and lemons are great choices. You can use a single type of fruit or mix and match different ones for unique flavor combinations. 
 
4.When I use this type of mold, I sometimes skip mixing the granola with honey or maple syrup and just sprinkle it over the yogurt before popping it in the freezer. However, whether or not you want to do it that way is entirely up to you. You can try it either way and see which one you prefer.
 
5. Cover the popsicles before freezing: Popsicle molds that come with lids help prevent the popsicles from forming icicles. The lids create a barrier that minimizes contact with the freezer air and reduces the chances of ice crystals forming on the surface. If you do not have lids, then simply cover with aluminum foil.
 
What to do if you don't have a popsicle mold? If you don't have a popsicle mold, you can use an ice cube tray, plastic cups or any small, shallow freezer safe container. Fill it with the yogurt and berry mixture and place in the freezer. Once the mixture is partially frozen, insert popsicle sticks or skewers in each compartment, and cover with plastic wrap or aluminum foil.
