Stove top Flatbread pizza

Stove top flatbread pizza creates a crispy crust topped with loads of melted cheese. A quick and easy dinner or lunch, with no oven required …perfect to satisfy your pizza craving.

Ingredients

  • 4 cooked Greek pita flatbreads See note 1
  • 15 ml / 1 Tablespoon oil
  • 250 ml / 1 cup pasta sauce
  • 2 cups grated cheese
  • 1 tomato sliced
  • Black pepper
  • Mixed herbs

Instructions

  • Brush both sides of the flatbread with oil.
  • Heat a heavy based skillet or pan on medium low heat. Place the flatbread on the pan and just toast for about 30 seconds to a minute on each side until lightly crisp. Remember the flatbreads are already cooked, you just want create a crispy base texture.
  • Remove from the heat and start adding your toppings Start by spreading the pasta sauce on each flatbread
  • Sprinkle the grated mozzarella cheese over the pasta sauce. See note 2
  • Arrange the sliced tomato over the cheese.
  • Sprinkle on some mixed herbs and black pepper.
  • Place the flatbread on the pan with the heat turned down to low. You want the cheese to melt but do not want to burn the base. To speed up the process a bit, put a lid on the pan to cover the pizza. This keeps the heat in and the cheese is perfectly melted.
  • Using a wide spatula remove the flatbread pizza from the pan and place on a plate….just wait for about a minute for it to cool a bit before adding the basil leaves. The basil leaves tend to wilt and turn black with the heat of the cooked pizza pizza…so just allow a minute to cool to ensure that the basil leaves keeps their bright green colour.
  • Cut into slices and serve.

  2. Remember this is a basic and simple topping recipe so feel free to add any other ingredients or herbs you love on a pizza. Other ingredients and topping suggestions include Sliced mushrooms, Pineapple pieces, Olives, Onion, Ham, Bacon bits, Feta, and cream cheese.
