Apple Oat Crunch

Don't you just love easy to prepare desserts? Like with this Apple Oat Crunch which takes just 5 minutes to prepare and 10 minutes to brown and crunch up the top. It really makes an amazingly quick dessert to prepare.

Ingredients

Filling

  • 1 can / 385g pie apples or 3 medium fresh apples peeled, cored and chopped
  • ¼ cup apricot jam
  • 2 tablespoon apple juice
  • ¼ cup raisins optional
  • ½ teaspoon powdered cinnamon

Topping

  • ½ cup oats
  • ½ cup all purpose / cake flour
  • ½ cup brown sugar
  • ½ cup butter cut into pieces

To serve

  • whipped cream

Instructions

  • Drain the apples and mix in the apricot jam and apple juice and raisins if using OR
  • If you are using fresh apples, peel the apples, remove the seeds and chop it up roughly. Then place in a small pot with the jam, apple juice, cinnamon and raisins if using. Cook on medium heat for about 5 minutes until soft.
  • Arrange in 4 individual ramekins or four cups.
  • TOPPING:
  • Mix the oats, flour and sugar and rub in the butter OR margarine using your fingertips.
  • Top the apples with the oat mixture, dot with butter and bake at 180ºC for about 10 minutes until golden brown.
  • Serve with whipped cream and dusted powdered cinnamon.
