Line a tray or baking sheet with parchment paper.
Place the cookies in a ziplock bag and crush them with a rolling pin or use a food processor. Do not remove the cream from the cookies.
Empty out the crushed Oreos into a large bowl and stir in the cream cheese until well combined.
Add any additional flavouring you prefer, like grated mint chocolate, essence, crushed candy canes. Please keep in mind that this is just an optional step. The truffles can be simply combined with cream cheese and crushed Oreos or additional flavouring as you prefer.
Shape the mixture into balls and place on the baking sheet.
Place the baking sheet with the shaped truffles in the freezer for 10 minutes. SEE NOTE 3
While the truffles are in the freezer, you can melt the chocolate either in the microwave or on the stovetop.
Dip the chilled truffles in the melted chocolate and place on the parchment-lined baking sheet. SEE NOTE 4
