Ingredients

  • 1 cup / 250 ml full fat / full cream milk
  • ¾ cup / 200ml whipping / fresh cream
  • ¾ teaspoon cinnamon powder
  • ½ teaspoon allspice / mixed spice
  • ½ teaspoon vanilla extract / essence
  • 2 teaspoons honey or sugar or adjust amount according to taste. SEE NOTE 1

Instructions

  • Measure out and add all the ingredients into a medium sized pot
  • Turn on the stove to medium heat and place the pot with the mixture onto the stove.
  • Heat the mixture until just warm. Do not boil. SEE NOTE 2
  • Pour the heated mixture into the blender. SEE NOTE 3
  • Close the blender with the lid and cover lightly with kitchen cloth, just to catch any spills.
  • Turn the blender on for 1 minute and blend the mixture until well combined.
  • If you feel that the blended latte is too grainy, then strain it when pouring into your mug or cup.
  • Leave for a few seconds as it forms a bubbly froth.
  • Serve warm or cold.

Notes

  1. Taste the mixture before you place it onto the stove and add the sugar accordingly. You might want it more or less sweet, so add the sweetener to your preference. In this recipe I found the addition of two teaspoons of sugar or honey perfect. But feel free to adjust this amount.
  2. Avoid boiling the milk, because after it is heated, it will be poured into the blender. Trapping very hot liquid inside of a blender and hitting the “on” button creates steam and pressure inside that could lead to the lid blowing off and the liquid exploding everywhere.
  3. Do not overfill the blender, the mixture should be just at the halfway mark of your blender. If you do double or triple the recipe, then make sure that you divide the mixture and blend it in separate batches...not all at once.If you overfill the blender, the milk is just going to overflow, and create a huge mess.
