  • 2 whole carrots scraped and chopped
  • ½ bunch celery with stalks and leaves chopped

  • 1 medium onion peeled and chopped
  • 2 cloves garlic peeled and chopped
  • Sprigs of thyme use as preferred
  • ½ teaspoon dried mixed herbs optional

Instructions

  • Chop the vegetables and toss into a blender with the herb, salt and peppercorns or ground black pepper. SEE NOTE 1
  • Cover with hot water from the kettle and leave for 5 minutes. This helps the vegetables soften and flavours begin to fuse.

  • Once blended, pour the mixture through a sieve or strainer into a bowl. Using a spoon, Press the vegetable pulp in the strainer to release as much of the liquid into the bowl as possible.
  • The broth can now either be used immediately or stored in the fridge for up to a week. It can also be poured into an ice cube tray and frozen, then used as needed.

Notes

1. Feel free to add vegetables like mushrooms, peppers and turnips or herbs like sage, basil or oregano to flavour your broth as well.
