Made in just 5 minutes, this Easy Homemade Vegetable Broth is so simple. Plus it is made without even turning on the stove.

Ingredients
2wholecarrotsscraped and chopped
½bunchcelery with stalks and leaveschopped
½cupcoriander or parsleychopped
1medium onionpeeled and chopped
2clovesgarlicpeeled and chopped
Sprigs of thymeuse as preferred
½teaspoondried mixed herbsoptional
Black peppercorns or ground pepperto taste
Saltto taste
Hot water from the kettlesufficient to cover the vegetables in the blender
Instructions
Chop the vegetables and toss into a blender with the herb, salt and peppercorns or ground black pepper. SEE NOTE 1
Cover with hot water from the kettle and leave for 5 minutes. This helps the vegetables soften and flavours begin to fuse.
After 5 minutes, cover with lid and turn on the blender. It should take about 1 to 2 minutes for all the vegetables to be well blended.
Once blended, pour the mixture through a sieve or strainer into a bowl. Using a spoon, Press the vegetable pulp in the strainer to release as much of the liquid into the bowl as possible.
The broth can now either be used immediately or stored in the fridge for up to a week. It can also be poured into an ice cube tray and frozen, then used as needed.
Notes
1. Feel free to add vegetables like mushrooms, peppers and turnips or herbs like sage, basil or oregano to flavour your broth as well.
