No Bake Lime Jelly Cheesecake

Prepared in just 10 minutes and set and ready to eat in 2 hours makes No Bake Lime Jelly Cheesecake a great dessert. and I absolutely love the tangy taste of lime and the ginger cookie crust which creates such a delicious flavor combination.

Ingredients

FOR THE CRUST / BASE

  • 200 g ginger cookies / graham crackers or any other cookies of your choice
  • ½ cup ( 120 g ) butter / margarine melted

FOR THE CHEESECAKE

  • 90 g sachet lime jelly crystals / Jell-o lime flavoured gelatin I used the vegetarian jelly crystals but you can use whichever you prefer
  • ¾ cup ( 200 ml )boiling water
  • 1 small lime rind and juice
  • 1 cup ( 8 oz / 225 g ) cream cheese
  • ²/3 cup ( 150 ml ) whipping cream
  • lime slices and whipped cream to decorate optional

Instructions

FOR THE CRUST / BASE

  • Place the biscuits in a plastic bag, grab your weapon of choice, mine is a rolling pin :) and crush the biscuits until it turns into fine crumbs
  • Stir the biscuit crumbs into the melted butter and press into the base of a 20 cm spring form tin.

FOR THE CHEESECAKE

  • Dissolve the jelly in the boiling water, add the lemon rind and juice and cool until on the point of setting. Gradually whisk the cooled jelly into the cream cheese
  • Whip the cream until it holds its shape and gently fold into the cream cheese mixture. Pour over the crumb base and chill for 2 hours minimum until set.
  • If preferred, decorate with lime slices, grated rind and piped whipped cream before serving
