Prepared in just 10 minutes and set and ready to eat in 2 hours makes No Bake Lime Jelly Cheesecake a great dessert. and I absolutely love the tangy taste of lime and the ginger cookie crust which creates such a delicious flavor combination.

Ingredients
FOR THE CRUST / BASE
200gginger cookies / graham crackers or any other cookies of your choice
½cup( 120 g ) butter / margarinemelted
FOR THE CHEESECAKE
90g sachet lime jelly crystals / Jell-o lime flavoured gelatinI used the vegetarian jelly crystals but you can use whichever you prefer
¾ cup( 200 ml )boiling water
1small limerind and juice
1cup ( 8 oz / 225 g ) cream cheese
²/3cup( 150 ml ) whipping cream
lime slices and whipped cream to decorateoptional
Instructions
FOR THE CRUST / BASE
Place the biscuits in a plastic bag, grab your weapon of choice, mine is a rolling pin :) and crush the biscuits until it turns into fine crumbs
Stir the biscuit crumbs into the melted butter and press into the base of a 20 cm spring form tin.
FOR THE CHEESECAKE
Dissolve the jelly in the boiling water, add the lemon rind and juice and cool until on the point of setting. Gradually whisk the cooled jelly into the cream cheese
Whip the cream until it holds its shape and gently fold into the cream cheese mixture. Pour over the crumb base and chill for 2 hours minimum until set.
If preferred, decorate with lime slices, grated rind and piped whipped cream before serving
