Pancakes with Warm Apple and Cinnamon Syrup

TO MAKE THE WARM APPLE CINNAMON SYRUP
TO MAKE THE PANCAKES
Whisk milk, buttermilk and vanilla together in a jug.
Sift flour and bicarbonate of soda / baking soda into a bowl.
Stir in sugar. Make a well in centre. Add milk mixture and whisk until just combined.
Heat a large non-stick frying pan over medium heat. Brush pan with butter or oil Using a ladle, pour the mixture into the pan and smooth and even the mixture into a circle with the back of the ladle.
After about 40 seconds , flip the pancake over when you see bubbles appear on the surface. Repeat on the other side for about 40 seconds again and remove from the heat and put it onto a plate. This process is repeated until all the batter is used up. You can keep the stack of pancakes warm by covering lightly with foil until you are ready to serve with the apple and cinnamon syrup.
TO MAKE THE APPLE CINNAMON SYRUP
Add butter, apples, brown sugar, and cinnamon to a medium saucepan. Stir over medium heat 3-5 minutes until apples are very tender. Stir in golden or maple syrup. Drizzle over the warm pancakes
- If you do not have any buttermilk or plain yoghurt, then just substitute it by adding 1 teaspoon of lemon juice or vinegar to ¼ cup ( 60ml) milk. Allow it to stand for 5 minutes before adding it to the recipe.
