Total Time 20 minutes

Ingredients

  • 1 cup / 225g melted and cooled butter
  • ¾ cup / 150g brown or white sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 cup / 120g all purpose / cake flour
  • 1 cup / 100g cocoa powder
  • 1 teaspoon salt
  • 1 ½ cups / 250g roughly chopped dark chocolate

Instructions

  • Start by lining an 8 inch / 20cm square pan with parchment / baking paper. Let the paper hang over the sides. This will make it easier to remove the baked brownies from the pan.
  • Melt the butter and allow it to cool. Once the butter has cooled, add in the sugar, eggs and vanilla. Stir the mixture with a whisk, do not use an electric beater and do not over mix
  • Sift in the flour, cocoa powder and salt and stir until the mixture is just combined.
  • Fold half of the chopped chocolate into the mixture and spread the batter into the lined pan. Add the remaining chopped chocolate over the batter
  • Bake in a preheated oven of 356°F /180°C for 15 to 18 minutes. If you insert a skewer into the brownies, it will still have batter clinging to it. Oven temperatures vary so check your brownies at 15 minutes. It will continue to bake in the pan even after it has been removed from the oven so do not overbake them. Allow it to cool in the pan for 10 minutes, before removing and cutting into slices.
