Instructions
FOR THE PIZZA DOUGH
Add flour and yoghurt / buttermilk in a bowl and mix together, then using your hands, gather the mixture to form a soft dough.
Leave the mixed dough in a bowl for about 15 minutes. Leaving the dough to rest will make it easier to roll out.
Take this time to prepare the sauce and toppings you prefer and grate the cheese for your pizza.
MAKING THE PIZZA SAUCE
Pour the oil into a small saucepan and turn the stove on to medium heat. Add in the diced onions and chopped bell pepper. Cook for 2 minutes, and then add in the rest of the pizza sauce ingredients. Let this mix simmer on the stove for 10 minutes until reduced and thickened. Spread over pressed pizza dough and add grated cheese and toppings of your choice.
ROLL OUT, ADD SAUCE, TOPPINGS AND BAKE
After 15 minutes, divide the dough into two equal pieces. On a floured surface, roll out each piece into about a 10 inch / 25 cm circle.
Place each of the rolled out circles of dough onto a baking sheet lined with baking paper. Alternately dust a teaspoon of polenta or semolina onto a pizza pan before placing the rolled out dough onto it.
Pinch the edges and top with pesto or pizza sauce and ingredients of your choice.
Bake for 12 minutes in a preheated oven of 400°F / 200° C
Notes
If you do not have self raising flour, then make your own by just adding 1 ¼ teaspoons of baking powder to each cup of flour.
