Stove top flatbread pizza creates a crispy crust topped with loads of melted cheese. A quick and easy dinner or lunch, with no oven, required …perfect to satisfy your pizza craving.
So it’s the start of a new week, busy, catching up on work and chores and thinking up an elaborate dinner is probably the last thing that you want to do right? Stove top flatbread pizza is the easy solution to a delicious and easy dinner.
A few weeks ago I shared a recipe for Greek pita flatbreads. I also stashed a few in the freezer to save for an easy dinner like this one. Thicker than other flatbreads like tortillas and naan, Greek pita flatbreads make the perfect base for these stovetop pizzas.
Unlike the bread-like frozen store-bought pizza bases, these are crispy, light and so so delicious.
In this recipe, I use my favorite, a basic mozzarella, tomato, and basil topping, but feel free to add other ingredients and herbs as you prefer. The flatbreads are already cooked so you just want to crisp it up a bit. Let me show you just how easy these are to put together
How to make stovetop flatbread pizza
Brush both sides of the flatbread with oil. You can use olive, canola or sunflower oil
Heat a heavy-based skillet or pan on medium-low heat. Place the flatbread on the pan and just toast for about 30 seconds to a minute on each side until lightly crisp. Remember the flatbreads are already cooked, you just want create a crispy base texture.
Remove from the heat and start adding your toppings. In keeping with the convenience and ease of this recipe, I use store-bought pasta sauce to spread as the tomato base topping. I love the one with olives and a bit of chili but again feel free to add the tomato base according to your liking.
Mozzarella cheese is grated over the pasta sauce and a few slices of tomato are added. Sprinkle on some mixed herbs and black pepper. Place the flatbread on the pan with the heat turned down to low. You want the cheese to melt but do not want to burn the base. To speed up the process a bit, I put a lid on the pan to cover the pizza. This keeps the heat in and the cheese is perfectly melted.
Using a wide spatula remove the flatbread pizza from the pan….just wait for about a minute for it to cool a bit before adding the basil leaves.
The basil leaves tend to wilt and turn black with the heat of the pizza…so just allow a minute to cool to ensure that the basil leaves keep their bright green color. Cut into slices and devour.
Cheaper than store-bought plus Easy, quick convenient and delicious, this is a great recipe to try for those busy days or for those hot summer days when you do not want to turn on the oven.

Stove top Flatbread pizza
Ingredients
- 4 cooked Greek pita flatbreads See note 1
- 15 ml / 1 Tablespoon oil
- 250 ml / 1 cup pasta sauce
- 2 cups grated cheese
- 1 tomato sliced
- Black pepper
- Mixed herbs
Instructions

- Sprinkle the grated mozzarella cheese over the pasta sauce. See note 2
- Arrange the sliced tomato over the cheese.
- Sprinkle on some mixed herbs and black pepper.
- Place the flatbread on the pan with the heat turned down to low. You want the cheese to melt but do not want to burn the base. To speed up the process a bit, put a lid on the pan to cover the pizza. This keeps the heat in and the cheese is perfectly melted.

The basil leaves tend to wilt and turn black with the heat of the cooked pizza pizza…so just allow a minute to cool to ensure that the basil leaves keeps their bright green colour.

- Remember this is a basic and simple topping recipe so feel free to add any other ingredients or herbs you love on a pizza. Other ingredients and topping suggestions include Sliced mushrooms, Pineapple pieces, Olives, Onion, Ham, Bacon bits, Feta, and cream cheese.

I love the idea of using those Greek pita flatbreads you made previously as the base for this easy stove top flatbread pizza recipe Ashika. I haven't got a lid for my skillet so in thinking through this recipe, after topping the flatbread with the cheese, I think I would quickly put it under my grill to finish it off. Yum, delcious. Dinner served! 🙂

If you do not have a lid for your skillet, it is fine to just cover it with a sheet of foil, it will work just as well as a lid 🙂

Sounds really delicious! I love the flavors here too, basil really is awesome on pizza! Good tip on letting it cool off before adding that. Nobody wants wilted basil! Never though of using pita bread as a topping but i think we have some pita bread around here that just found a use! 😀

What a fun, quick, and satisfying dinner! I love simple toppings for my pizza. I normally use crushed tomatoes instead of pizza sauce but I love recipes like this because they are easily adaptable. My mouth is watering thinking about this flatbread pizza. YUM!
